Joseph's Lunch Box

After spending more than 20 years working in the restaurant industry, Joseph Elizalde knew he wanted to create something of his own. Inspired by memories of cooking alongside his grandmother and a desire to provide quality homestyle meals, Joseph joined forces with Leslie Rosales to open Joseph's Lunch Box in Corpus Christi, TX.

Their vision was simple: create a welcoming environment where customers could enjoy fresh, made-to-order meals that feel like home. Today, Joseph's Lunch Box has become a local favorite, offering daily lunch specials, soups, salads, sandwiches, burrito bowls, vegetarian options, and catering services for the community.

Turning a dream into a successful business requires more than culinary talent. It requires planning, preparation, and access to the right resources. Through the Del Mar College Small Business Development Center, Joseph and Leslie worked with Business Advisor Diana Robison to navigate the startup process and establish a strong foundation for growth.

The assistance provided included business startup guidance, EIN and sales tax registration support, and continued advising as the business expanded. With these resources in place, Joseph and Leslie were able to focus on bringing their vision to life and serving customers with confidence.

Today, Joseph's Lunch Box stands as an example of how passion, dedication, and the right support can help entrepreneurs build successful businesses that strengthen the local economy and enrich their communities.
